The inspiration for this fresh take on strawberry shortcake comes from my dear grandmother, who used to make chocolate chip sour cream pound cake for every family gathering. I thought, why not combine the two? And that’s how this amazing recipe was born.

This easy-to-follow recipe only requires a few simple ingredients, a mixer, fresh berries, and whipped cream. So, if it’s strawberry season or you spot some luscious berries at the farmer’s market or grocery store, it’s time to whip up this wonderful dessert!

How To Make Strawberry Shortcake Pound Cake

Strawberry Shortcake With Pound Cake Ingredients:

  • 2 cups unsalted butter, softened
  • 3 cups + 2 tablespoons granulated sugar, separated
  • 6 large eggs, room temperature
  • 4 cups all-purpose flour
  • 3/4 cups whole milk
  • 1 tablespoon vanilla extract
  • 2 pints fresh strawberries
  • 1 can whipped cream or whipped topping

Supplies Needed:

  • Large bundt pan or two loaf pans
  • Nonstick spray
  • Electric mixer
  • Rubber spatula
  • Wire cooling rack
  • Large cutting board
  • Sharp knife
  • Large mixing bowl
  • Kitchen spoon or wooden spoon

Directions:

Step 1: Preheat your oven to 300 degrees and spray a bundt pan or two loaf pans with nonstick cooking spray.

Step 2: Using an electric mixer on medium speed, beat the softened butter until it is light and creamy. You can use a hand mixer, but I find it easier to mix everything in the bowl of a stand mixer since it provides stability.

Step 3: Add the vanilla extract and mix it in thoroughly.

Step 4: Gradually add 3 cups of sugar, a little at a time, and continue beating the mixture until it becomes light and fluffy.

Step 5: Add the eggs, one at a time, and continue to mix until the batter is well combined.

Step 6: Now it’s time to add the flour and milk. Alternate between adding a little bit of each ingredient at a time. This method will help keep the cake batter smooth and prevent any lumps.

Step 7: Beat the batter on low speed to ensure all the dry ingredients are well incorporated and to smooth out any lumps. Don’t forget to scrape the sides and bottom of the bowl with a rubber spatula to incorporate all the batter.

Step 8: Pour the cake batter into the prepared pan(s) and bake for approximately 1 hour and 40 minutes, or until a toothpick inserted into the center comes out clean.

Step 9: Allow the pound cake to cool in the pan on a wire rack for 10-15 minutes before removing it from the pan.

Step 10: While the cake is baking, prepare your strawberries. Wash them, remove the stems, and cut them into quarters. Place the fresh berries in a large bowl and toss them with 2 tablespoons of sugar. Refrigerate the strawberries for 30 minutes to let their natural juices flow.

Strawberry Shortcake Ideas

Idea #1: Slice the pound cake into equal pieces and place them on a plate. Top the slices with juicy strawberries and dollops of whipped cream, such as Reddi Wip or Cool Whip.

Idea #2: For a layered version, start with a bottom layer of pound cake. Add a spoonful of the strawberry mixture on top, then another slice of cake, more sliced strawberries, and whipped cream. This creation will resemble a Strawberry Shortcake Cake, but keep in mind that thinner cake slices might not hold up as well.

How to Store Leftover Strawberry Shortcake with Pound Cake

If you’re lucky enough to have any leftovers, store the pound cake in an airtight container on the counter for up to 4 days or in the refrigerator for up to a week.

Remember to use the strawberries within the first two days after they’ve been cut. Adding a little lemon juice might help extend their freshness for a few extra hours.

I Only Have One Loaf Pan. What Do I Do?

If you have only one loaf pan, don’t worry! You can still make it work. Pour half of the batter into the single prepared loaf pan and bake it. Cover the remaining batter in the mixing bowl with plastic wrap and refrigerate it until the first loaf is baked.

Once the first loaf has cooled for 15 minutes on a wire rack, remove it from the pan. Rinse and dry the pan thoroughly, then pour in the remaining batter. Bake the second cake and enjoy the delicious pound cake with your Strawberry Shortcake creation.
