My kids can’t contain their excitement whenever homemade Chicken Noodle Soup is on the menu, and for a good reason – it’s AMAZING! It’s become my go-to recipe to bring to friends or neighbors during the cooler seasons, and it’s always a hit.

What Type of Noodles?

When it comes to the type of noodles for chicken noodle soup, the possibilities are endless. While my mom always made it with homemade egg noodles, you can use any kind of noodles you have on hand:

  • Homemade Egg noodles: Made with flour, salt, milk, and eggs, these noodles are ready in just 5 minutes!
  • Farfalle pasta
  • Elbow macaroni
  • Rotini

About the Chicken Stock

If you’re wondering whether to use homemade chicken stock or store-bought for this recipe, always choose homemade for the best flavor. The secret is to use a rotisserie chicken – you can use the meat in the soup and make chicken broth with the leftover carcass and bones. It’s surprisingly easy and adds a depth of flavor that takes the soup to another level.

How to Make Homemade Chicken Noodle Soup:

  1. Make Homemade Chicken Stock ahead of time using a rotisserie chicken or a good brand of store-bought chicken stock.

  2. Sauté veggies. In a large stockpot over medium-high heat, add butter, diced celery, and carrots. Sauté for 3 minutes, then add garlic and cook for another 30 seconds.

  1. Add chicken stock or broth. Season the broth with salt, pepper, a tiny pinch of rosemary, sage, and crushed red pepper. Adjust the seasonings to taste, adding more if needed.

  1. Add noodles and boil. Once the broth is boiling, add the noodles – either the uncooked homemade egg noodles or dry store-bought pasta. Cook just until the noodles are al dente. Be cautious not to overcook store-bought noodles! Remove the pot from heat as soon as the noodles are just barely tender, as they will continue to cook off the heat.

  1. Add chicken. Add the chicken meat from the rotisserie chicken. Taste the broth again and adjust the seasonings if needed.

Make Ahead and Freezing Instructions

To make ahead: This soup is best made ahead of time when using homemade egg noodles, as they don’t get soggy and overcooked like regular store-bought noodles.
