Aam ka achar - Mango Pickle

Summer is here, and with it comes an abundance of raw mangoes. This is the perfect time to make some homemade Aam ka achar, also known as mango pickle. As I prepare this achar, it takes me back to my childhood memories. I remember the summertime tradition of gathering with the ladies in the neighborhood to make achar. We would chat, have tea and lunch together, and help each other create these delicious pickles. While the adults worked, we children would play and pass the time. At the end of the day, everyone would leave with their own jar of achar. It’s a nostalgic memory that warms my heart 🥰.

The Recipe

This recipe is incredibly simple. Most of the hard work involves cutting the mangoes, while the sun does the rest. Place the jar of pickles in the hot sun, and the higher the temperature, the quicker the pickle will be ready. It typically takes about a week for the pickle to reach its full flavor. For this recipe, I have used approximately 2 kg (4.1 pounds) of 4 jumbo-sized mangoes. I prefer my pickle spices to be on the milder side, but you can adjust the black peppercorns and red chili powder according to your taste.

Tips for a Perfect Pickle

Here are a few tips to keep in mind to ensure your pickle turns out perfect:
